Chocolate-Almond Butter Bites

Hidden Springs Organic Vermont Maple Syrup, Grade A Dark Robust

These bites are delicious and very rich! If anyone wants to stay keto/candida-compliant, replace the maple syrup with xylitol or stevia.

Almond Butter Layer
 1 cup Almond Butter
 ½ cup Coconut Flour
 2 tbsp Pure Maple Syrup
Dark Chocolate Layer
 ½ cup Coconut Oil
 ¼ cup Cacao Powder
 2 tbsp Pure Maple Syrup, possibly 4 tbsp depending on desired sweetness
 1 tsp Vanilla Extract
Optional
 2 tbsp Coconut Flakes

1. In a small mixing bowl, combine the almond butter, coconut flour, and maple syrup. Mix until smooth.

In a 4x6 glass pan with parchment paper, spread the almond butter layer evenly across the bottom.

In a medium saucepan, melt the coconut oil over low heat.

Once melted, mix in the cacao powder, maple syrup, and vanilla extract.

Once thoroughly mixed, pour the mixture over the almond butter layer and store in the freezer for 70-80 minutes. If using coconut flakes, after about 30 minutes remove from freezer and sprinkle coconut flakes. Return to freezer.

Remove from freezer, cut into squares, and store in the fridge. I find that these taste better after sitting in the fridge for a day or two.
