Paleo Basil Pesto

Ingredients used:

Pompeian Organic Extra Virgin Olive Oil

Fine Ground Celtic Sea Salt

All other ingredients may be found at your local health foods store.

This paleo-friendly basil pesto recipe is a must-have when making chicken or lean fish as it adds some good quality fat to balance out the macronutrient ratio. It also pairs well with eggplant, potatoes, or zucchini!

 2 cups Fresh Basil
 4 Cloves Garlic
 ½ cup Sprouted Walnuts
 1 tsp Lemon Juice
 ½ cup Extra Virgin Olive Oil
 Sea Salt to taste

Place the basil, garlic, and walnuts in a food processor and puree to the desired amount of thickness.

Add the lemon juice and continue mixing.

While the food processor is on, slowly add the olive oil until thoroughly mixed.

Pour into a pint-sized mason jar, add sea salt to taste, and stir.

Serve.
