Strawberry-Balsamic Salmon

Ingredients Used:
Botticelli Organic Balsamic Vinegar of Modena. Smooth, Dark and Authentic Vinegar Produced in Italy.
Fine Ground Celtic Sea Salt

All other ingredients may be found at your local health foods store. Always buy organic, obviously.

I know what you're thinking.... fruit on salmon?! Balsamic vinegar and black pepper intensify the flavor of strawberries, bringing out their sweetness. Makes for a great combination on salmon!

 4 Salmon Filets
 ¼ cup Balsamic Vinegar
 2 tbsp Dijon Mustard
 1 Lemon, 1/2 juiced, 1/2 sliced
 2 Strawberries, sliced
 6 Blackberries
 Sea Salt and Pepper to taste

In a small bowl, whisk together the balsamic vinegar, dijon mustard, and juice from 1/2 lemon.

In a glass baking dish, place the salmon filets and pour the balsamic mixture. Add sea salt and pepper to taste.

Place the strawberries, blackberries, and lemon slices evenly across the salmon filets and let sit for 20 minutes to marinate while preheating the oven to 350ºF.

Bake in the oven at 350ºF for 18 minutes.

Let cool and serve.
