Ahi-Tuna Melt

Ingredients Used:
Epic Animal Fats, Duck Fat
Fine Ground Celtic Sea Salt

Unfortunately, the price for Celtic Sea Salt on Amazon has recently gone up to ~$9, however that is still the best price available. All other ingredients may be found at your local health foods store. I like to go to Trader Joe’s for the Ahi-Tuna steaks and organic sour batard. Whole Food’s has the only organic dijon mustard that does not have any added sugars!

I think it's acceptable for a healthy individual to have bread every now and then. As long as a person is able to restore their gut health first, then it shouldn't be a problem. With that said, this tuna melt is perfect on some nice sourdough bread.

 2 Ahi-Tuna Steaks
 2 Celery Sticks, thinly sliced
 ½ cup Cherry Tomatoes, quartered
 1 tbsp Dijon Mustard
 4 oz Raw, Grass-Fed, Organic Cheddar Cheese, shredded or thinly sliced
 1 tbsp Duck Fat
 4 Slices Organic Sourdough Bread

In a well-seasoned cast-iron skillet, heat the duck fat over high heat and place the Ahi-Tuna Steaks. Add the dijon mustard, sea salt, and pepper to taste. Sear on either side for 3 minutes.

After both sides have seared, reduce the heat to medium, add the celery, and beginning chopping the tuna steaks with a metal spatula.

Once the tuna steaks are about 80% done, approximately 10 minutes, reduce the heat to low, add the cherry tomatoes and cheese and let cook for 2 more minutes.

Serve on sourdough bread.
