This recipe is great for anyone who loves fish! Parsley adds a clean, fresh taste to this dish and is rich in iron and vitamins A and C. Cooking the garden celery tempers the bitterness while retaining their other aromatic properties, adding a mild taste and crunch to this salmon.

 4 Salmon Filets
 2 Celery Sticks, Diced
 2 Cloves garlic, 1 minced 1 chopped
 1 Lemon
 ¼ cup Parsley, chopped
 1 tbsp Dijon Mustard
 1 tbsp Beef Tallow
 Sea Salt & Pepper to taste

In a small bowl, whisk together 2 Tbsp of lemon juice, 1 Tbsp of dijon mustard, and minced garlic.

In a well-seasoned cast-iron skillet, melt one Tbsp of your choice of cooking oil over medium-high heat.

Once evenly coated, place the four salmon filets on the cast-iron. With a basting brush, brush the lemon juice, mustard, and garlic mix over the salmon filets. Add sea salt and pepper to taste.

Add the chopped parsley, chopped garlic, and chopped celery to the salmon and cast-iron and let cook for a total of 12 minutes.
